Fabulous Friday Food - Pumpkin Squares

It's pumpkin time and I couldn't be happier. I absolutely love pumpkin anything.
Pumpkin soup. Pumpkin cookies. Pumpkin pie.

Pumpkin is one of the great joys of my life . . . if you can find it. Last year I raced all over town trying to find the orange goodness in a can, to no avail. It took a while, but they finally got some in the stores.

A couple of weeks ago I thought I was going to be in the same boat--I looked and looked, but couldn't find pumpkin anywhere. Thankfully, our stores got well-stocked last week. Pumpkin abounds!
So I'm hoarding.

Don't tell Libby's.

Anyway, since my weekend is just a little crazy with Homecoming and all, I thought I'd just link up to a recipe I gave you a couple of years ago for some absolutely delicious pumpkin squares. We'll be eating them this weekend, in fact.

  1. Those bars look awesome. I love pumpkin too. I don't think we hit the pumpkin shortage here in Canada last year but I better get to the store quick here as it's our Thanksgiving next weekend and I'm sure they'll be running low by next Saturday.

  3. I don't have a link so here' my favorite recipe for chilly evenings -

    White Chicken Chili
    1 rotisserie chicken
    1 block pepper jack cheese
    1 jar salsa
    1 can northern beans
    1 box chicken broth

    Remove chicken from the bone, grate the cheese and combine all ingredients in a crock pot. I usually set it on high for 6 hours or so.
    Especially good left over on nachos.
